It actually all started this morning when I thought to make the Sour Cream Apple Pie from the Posy Gets Cosy blog. But then did not have most of the ingredients.
Instead it became a dinner replacement recipe for when a littlest Sister has a run in with a swing and the resultant split lip.
1/3 of the dough recipe you luckily have sitting in the fridge
1 extra large apple, sliced
1/2 c. cream
1/2 c. sour cream
3t sugar or honey
Roll out dough to an extra large circle so that dough hangs over the edge of your pie pan which is luckily clean, butter or oil pie pan, place dough in pan. Layer in sliced apple. Whisk together wet and dry ingredients remaining and pour over apples. Gently pull remainder of dough over the filling. Place in preheated 400 degree oven until firmed up and crusty.
It is always nice to indulge the slightly injured. A smile is all I wanted to bring to her sore little face. Luckily as the fourth child Mama has given up on making them eat their kale first. And it really would just be mean to make her eat a salad, pickled eggs and popcorn with a split lip, wouldn’t it?
